Ingredients
3 lbs beef brisket flat, cubedAmazon β†—

3 dried guajillo chilesAmazon β†—
2 dried chipotle chilesAmazon β†—
2 tbsp soy sauceAmazon β†—
1 cup cold brew coffee concentrateAmazon β†—
2 oz bourbonAmazon β†—
1 white onionAmazon β†—
8 garlic clovesAmazon β†—
3 cups beef brothAmazon β†—
2 tsp cuminAmazon β†—
1 tsp Mexican oreganoAmazon β†—

Steps

Toast all dried chiles dry in a skillet until fragrant and pliable

Soak chiles in 2 cups hot water 20 minutes until fully softened

Blend softened chiles with soaking liquid, soy sauce, and garlic until very smooth

Brown brisket cubes in a large Dutch oven in batches β€” deep brown on all sides

SautΓ© onion in remaining fat until deeply caramelized, about 15 minutes

Add chile paste and cook 5 minutes, stirring constantly

Add broth, cumin, and oregano, return brisket

Simmer very low for 2.5 hours

Stir in cold brew coffee and simmer 1 more hour

Add bourbon in the last 10 minutes

Rest 15 minutes before serving β€” best the next day
