2 lbs boneless chicken thighs
28 oz crushed tomatoes
1 can kidney beans
1 large onion
4 garlic cloves
2 tbsp chili powder
2 tsp smoked paprika
1 tsp cumin
1 cup chicken broth

Steps

Season the chicken thighs with salt and pepper.

Brown them in a little oil in a large pot, about 3 minutes per side — that seared surface is the first layer of flavor.

Remove the chicken and sauté the onion and garlic until soft.

Add the chili powder, smoked paprika, and cumin — the double hit of smoked paprika is what gives this its smoky backbone.
