Substitutions & tips

Ingredients
2 lbs ground beef
12 oz stout beer (Guinness or similar)
2 chipotles in adobo, minced
1 large onion, diced
4 garlic cloves
28 oz crushed tomatoes
1 can kidney beans
1 can black beans
2 tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
1 tsp oregano
Steps

Brown the ground beef in a large pot and drain the fat.

Sauté the onion and garlic until softened.

Add the chipotles, chili powder, cumin, smoked paprika, and oregano and stir to bloom.

Pour in the stout and scrape up all the browned bits from the bottom of the pot.

Let the beer reduce by half, about 5 minutes — this is the key step; reducing concentrates the malty depth and cooks off the raw-alcohol edge.

Add the crushed tomatoes, bring to a boil, then simmer 45 minutes.

Add both cans of beans and simmer 20 minutes more, until thick.
