Skillet Cornbread Chili Bake

One skillet, one oven, one very happy table. This is the lazy-genius cousin of the cornbread-topped casserole: you brown the chili right in a cast-iron skillet, pour cornbread batter straight over the top, and slide the whole thing into the oven. As it bakes, steam from the bubbling chili rises up into the batter and gives the cornbread an almost impossibly light, fluffy lift, while the underside soaks up just enough chili to go tender. You get crisp cheddar-crusted cornbread, a soft middle layer, and a hearty beef-and-bean base — a complete dinner with a single pan to wash. It's weeknight cooking at its most satisfying and least fussy.

Substitutions & tips

Ground turkey subs for beef; from-scratch cornbread batter works if you'd rather skip the box. The corner pieces, where the cornbread crisps against the hot skillet, get fought over.


Ingredients
1.5 lbs ground beef
1 can diced tomatoes
1 can kidney beans
2 tbsp chili powder
1 tsp cumin
Salt and pepper
1 box cornbread mix
1 egg
1/3 cup milk
Shredded cheddar on top
Steps

Preheat the oven to 400°F.

Brown the ground beef in a large oven-safe (cast-iron) skillet and drain the fat.

Add the diced tomatoes, kidney beans, chili powder, cumin, and salt and stir.

Simmer 10 minutes, until slightly thickened — you want it thick, not soupy, or the cornbread won't set on top.

Mix the cornbread batter with the egg and milk per the package.

Pour the batter evenly over the chili, spreading it to the edges to seal the top.

Scatter cheddar over the batter and bake 20–25 minutes, until the cornbread is golden and set. The steam from the chili below is what makes it so fluffy.
