Black Bean Chipotle Turkey Chili
This is the chili that quietly converts people who think turkey chili is a diet compromise. The trick is chipotles in adobo — a couple of those smoky, brick-red peppers give lean ground turkey the deep, slow-cooked flavor you'd swear came from beef and hours on the stove. Fire-roasted tomatoes and black beans round it into something hearty and a little smoky, ready in about 45 minutes but tasting like it worked harder. It's the weeknight pot to keep in your back pocket for when you want something genuinely satisfying that also happens to be lean.

A dollop of sour cream or a squeeze of lime cools and brightens the smoke; scallions, avocado, and cotija all suit it.
Start with one chipotle if you're heat-shy — they're potent, and you can always stir in more of the adobo sauce. Ground chicken works in place of turkey.
