1.5 lbs ground turkey
3 cans black beans
2 chipotles in adobo, minced
28 oz fire-roasted tomatoes
1 large onion
4 garlic cloves
2 tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
2 cups chicken broth

Brown the ground turkey in a large pot, breaking it apart as it cooks — turkey is lean, so keep it moving and don't let it dry out.

Add the onion and garlic and cook about 5 minutes until softened.

Stir in the minced chipotles and all the spices, letting them toast in the pot for a minute. The chipotles are the whole point here — that's where the smoke and depth come from.

Add the fire-roasted tomatoes and chicken broth, scraping the bottom of the pot.

Bring to a boil, then simmer 25 minutes to build flavor.
