Guinness Extra Stout Texas Chili

This is a no-frills Texas chili with an Irish accent, and the two get along better than you'd guess. A full can of Guinness Extra Stout stands in for water, and as it simmers down over a couple of hours it lends a dark, roasty, almost espresso-like richness — the same quality that makes stout so good in a beef stew, put to work in a bowl of chili. Otherwise it stays true to Texas: coarse-ground beef, toasted ancho and pasilla ground fresh, tomato sauce, no beans. The result is honest, deep, and unfussy, the kind of chili that doesn't need a dozen ingredients because it lets the beef, the chiles, and the beer do all the talking.

Substitutions & tips

Any dry stout works; the roastier, the better. Coarse "chili grind" beef gives the best texture. A little masa slurry thickens it further if you like it stiffer.


Ingredients
2.5 lbs coarse-ground beef chuck
1 can (14.9 oz) Guinness Extra Stout
4 dried ancho chiles, toasted and ground
2 dried pasilla chiles, toasted and ground
1 large white onion, diced
6 garlic cloves, minced
1 can (8 oz) tomato sauce
2 tsp cumin
1 tsp oregano

Toast and grind the dried ancho and pasilla chiles in a dry skillet until fragrant — grinding your own toasted chiles beats pre-ground powder by a mile.

Brown the coarse-ground beef in a heavy pot and drain the excess fat.

Add the onion and garlic and cook 5 minutes until soft.

Stir in the ground dried chiles, cumin, and oregano.

Pour in the Guinness and tomato sauce and stir well, scraping the bottom.

Bring to a boil, then reduce to a low simmer.

Cook uncovered 1.5 hours, adding a splash of water if it gets too dry, until dark and thick.
